I’ve been eating so much tilapia and chicken that my gag reflex kinda kicks in when I think about eating them. If you have any good, unique chicken and fish recipes, please share! Maybe it’ll help me stray from the easy and convenient path I’ve found myself in!
Because of this gagging thing going on, I’ve been craving red meat and since I have this awesome new cookbook, I’m using it to my advantage! The original recipe for this stew (it’s more like soup, not thick like a stew) called for it to be made stove top but I made it in the crock pot. I have a REALLY hard time following a recipe exactly, maybe it’s my ADD, but I’ll go with it’s my creative juices 🙂
The serving size for this equals to: .5 green, .5 yellow, and 1.5 red for you 21 day fixers out there! This is what I used for the recipe which slightly strays from the original. Props to Autumn for putting this together!
-1 tsp oil
-2 lbs lean stew meat
-1 medium sweet onion, chopped
-4 carrots, sliced
-2 celery stalks, chopped
-4 cloves of garlic, minced
-2 medium tomatoes chopped
-2 sweet potatoes, peeled and chopped into 1-inch pieces
-5 cups low sodium, organic beef broth
-1/2 cup red wine
-1/4 tsp sea salt
-1 tsp black pepper
-1 tsp smoked paprika
-3 bay leaves
-2 tsp of arrowroot powder mixed in lukewarm water
Measure the spices, set aside. Chop the onion, garlic, celery, and carrot and heat the oil in a large saute pan over medium-high heat. When the oil is heated, toss these in and cook until the onion is translucent which is about 8 minutes. Toss them into the crock pot.
While the pan is still hot, put the stew meat in there and let it brown on each side, then pour in the wine and de-glaze the pan (get the little bits of beef off the bottom). Then pour in half the broth and bring to a boil along with the seasonings. Mix in the arrowroot powder and let it cook down a bit. While that’s cooking down, chop the sweet potato and put in the crock pot. Put all the ingredients in the crock pot and give it a stir. Set it to low for 7-8 hours.
