When we got back from my very first cruise ever (where I TOTALLY ate more than I should have & had dessert every night) I wasn’t ready to go fully healthy again… Can ya blame me?? Aside from indulging myself physically, my soul was fed too. I was able to spend some QT with my fam & main squeeze! ❤️
I stumbled across this recipe in the first cookbook I bought Shawn… He used to be the cook when we dated–> not sure what happened there lol! Our first Christmas together, I thought I’d give him some inspiration for what he’d cook for me. Nowwwwww, I’m the only one using it haha!
Jambalaya bowl 😍 Sign. Me. Up!
This is what I did:
-2 chicken breasts, chopped
-1 pack of Spicy chicken sausage, sliced
-1 lb shrimp, peeled, de-veined, tail off (add at the end)
-1 onion, chopped
-1 green pepper, chopped
-6 stalks of celery, chopped
-1 clove of garlic, minced
-1 cup of brown rice (I used minute because it’s what we had, can reduce amount or omit all together)
-1-14.5 oz of reduced sodium chicken broth (I ran out & used beef broth)
-1-14.5 oz seasoned diced tomatoes
-3 cups tomato juice
-8 drops of hot sauce
-3 tsp of Cajun seasoning (I used Chef Paul’s Blackened fish magic seasoning), divided
-salt & pepper to taste
In a large pot, heat the oil over medium. Add the sausage and chicken with 1 tsp of the Cajun seasoning (yes, just 1) and saute until the chicken is no longer pink. Remove these from the pan and set aside.
In the same pan add in the veggies with another tsp of the seasoning and let them cook until they’re all soft… About 7 min.
Add in the rice & remaining tsp of the seasoning & cook for about 3 min. Then stir in the tomato juice, diced tomatoes, hot sauce, chicken broth, & let it cook (covered) for about 10 minutes for the rice to cook.
Season with salt & pepper and do a little quality control (aka taste it) & add more if ya need to. Toss in the shrimp & cook until the shrimp is cooked!
It may seem like there are a lot of steps but prep the veggies ahead of time, measure everything out, & it’ll make for smooth sailing!
