THE best gluten free pancakes

Because I’m on a mission to convince people that gluten free doesn’t suck! Not only does Shawn approve of these (and he’s Keto & it fits in his macros) but I’ve made these for about 6 other people too and they all requested the recipe!

When you make these, please let me know whatcha think!!!


  • 2 c almond flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/3 c erythritol (if you don’t wanna use this, you can use organic cane sugar or
    coconut sugar, omit the stevia if you go this route)
  • 4 eggs
  • 1/2 c unsweetened regular almond milk
  • 1/4 c butter, melted
  • 10 drops of liquid stevia
  • 2 tsp real vanilla extract


Combine ingredients. Spray a skillet/griddle with oil & cook over medium heat. When the bubbles form on the top and pop, it’s time to flip! Usually around 4 minutes on the first side and then another minute or two on the second side.
We like to put crunchy sun butter on these & top with either keto syrup (Shawn), real maple syrup, OR make a homemade fruit syrup!
